About Me

For anyone who is interested in finding out more about the person behind The Slow Carb Cook and all these great and easy slow carb recipes, I thought that I would do a bit of a bio page here so that you can learn a little about me.  My education background is in the sciences, where I started with a Bachelor of Science degree in biochemistry and molecular biology, and followed that up with my Master of Science degree in the department of medicine, specializing in cardiology.  Following that (and where I still am today), I moved in pharmaceutical research where I do work in several different areas, such as cancer or high cholesterol.  Obviously, health has always been important to me, and learning about the molecules and pathways that are active in our bodies in various situations gives me an appreciation of what our bodies requires for nutrition and how it actually processes the foods that we do eat.  At the same time, understanding what our bodies requires also provides a sense of what our bodies do NOT need.

I've always tried to eat well, though going through school and the demands of studying meant that I often ended up sacrificing exercise and eating what was available, not what I knew I should be having.  As a result, by the time I was through school I had put on quite a bit of weight, which as anyone who has tried losing weight can attest to, it is easier to put on than to take off.  So I started to pay more attention and apply the concepts that I was learning in school to my own life, and started trying out various diets while getting back into exercising at the gym.  Eventually, I settled into a groove where I had achieved a good weight and I was happy with my body (nowhere near a cover model though!), my diet was much healthier and I had a routine of going to the gym.

Then I got engaged, and the stresses that came with planning the wedding quickly started turning into junk food, skipping workouts, and putting the weight back on.  Obviously, this wasn't a good thing to happen before my wedding, the day where I want to look my absolute best!  It was at this point, trying to put the brakes on the bad habit train, that I started reading The 4 Hour Body by Tim Ferriss and where I discovered the slow carb diet.  It was difficult to adapt to the very repetitive foods that I was eating, though I never complained about them tasting boring or bland.  I always enjoyed my meals, and the Saturday cheat day donut from the bakery was always a goal that got me through the weeks.  In the end, I got my weight back down before the wedding (and so did my bride-to-be!), and we had a great day and great pictures to prove it.

So, that is my short slow carb diet story in a nutshell.  I believe in the results that it brought me, and to be quite honest, I frequently added small cheats along the way (such as grated cheese here and there, for example), so following the diet to the letter I know will bring even faster results.  Furthermore, my experiences were around the time that the slow carb diet was just picking up steam, so there really wasn't the diversity and selection of recipes available to me as there is right now.  So, because I found results and I believe in the diet, I decided to start this blog and share some of the recipes that I created or found.  As time goes on, I will do my best to bring great diet ideas (like slow carb snacks and recipes that I concoct on my own or discover on someone else's site) to my readers so that they can hopefully also find some success and happiness with the slow carb diet like I did.
